rice and bean mexican dish

yummy! you can scoop up with corn tortilla chips, serve in a bowl with crushed tortilla chips, add to a salad, wrap in a lettuce leaf....You could add taco seasoned meat. Portions are just approximate. Add more or less, as desired, as long as it has a creamy consistancy before you bake it. It will "dry" up a bit as it bakes.

Ingredients
4 cups COOKED brown rice
1 1/2 cup sour cream (any fat content)
1/4 1/2 cup salsa
1 can rinsed black beans
2 cups shredded cheese
Instructions
stir sour cream and salsa. Add drained and rinsed beans, brown rice and half of the shredded cheese. spread into baking dish. top with the rest of the cheese. bake at 350 degrees for about 30 minutes or until cheese is done to your liking.
