Roasted Pumpkin
Sure, you could open a can, but roasting your own is simple to do!

An EASY way to enjoy those in season pumpkins. A good starting place for any pumpkin dessert, or as a great side dish to most any meal. Inexpensive and tasty!

Instructions
Remove stem, cut pumpkin in half. Remove stringy pulp and discard. Reserve the seeds to be washed, dried and roasted later. Be sure to clean out the cavity of the pumpkin with a spoon until all that is left is the firm flesh of the pumpkin. Place in a shallow baking pan, cut side down. Cover with foil and bake in a 375 degree oven for 90 minutes or until tender. Allow to cool, scoop out flesh and either mash or puree for use in your recipes or as a side dish seasoned as you desire.
