Scallion and goat cheese muffin safe

Cooking time 20 to 25 minutes
Servings 10 muffins

Ingredients

1 1/2 cups blanched almond flour
1 teaspoon salt
1/2 teaspoon baking powder
1/2 teaspoon black pepper
1/4 cup olive oil
3 large eggs
1/2 cup thinly sliced scallions (white and green parts)
10 tablespoons goat cheese

Instructions

Preheat oven to 350 degrees

Line 10 muffin cups with liners

In a large bowl combine the almond flour,salt,baking soda,black pepper.

In a medium bowl mix together the olive oil and eggs. Add to the flour mixture. Blending with a hand held mixer until blended.

Then add the scallions.

Scoop 3 tablespoons into muffin cups. Then press 1 tablespoon into the center of each muffin.

Bake about 20 to 25 minutes

Let cool and serve
