Shallot Maple Dressing
Really great with a spinach salad

This is a dressing that I had when I was out to dinner with my daughter. I knew that I was going to have to figure out a way to recreate the dressing. I loved it at first bite. I did just that and it tastes exactly the same. This dressing is on the sweet side. You can add less maple syrup if needed.

Ingredients
1 Tablesoon olive oil
1 small shallot
2 to 3 tablespoons agave maple syrup
3 tablespoons balsamic vinegar
1/2 teaspoon dijon mustard
salt and pepper to taste
1/2 cup canola oil
Instructions
Saute shallot in the olive oil until soft.
Put all ingredient into a blenda except for the canola oil
Blend together adding in a thin stream the canola oil
