We prefer the taste of homemade sausage. It is a bit sticky when mixing by hand, so I wear rubber gloves. I haven't tried to make links with a sausage stuffer. It works well as a pizza topping, crumbled & browned in pasta sauce, or in polenta dishes. Jennie O and Foster Farms say that their ground turkey contains no gluten ingredients, FWIW. They seem fine for our family.

Ingredients
1 lb ground turkey or chicken
1 oz white wine
1 large clove garlic, crushed
2 teaspoons fennel seed
1 teaspoon salt (more or less to taste)
1/2 teaspoon white pepper (more or less to taste)
Crushed red pepper flakes may be added to increase heat (1/4 1/2 teaspoon)
Instructions
Place ground meat in large bowl, add wine and spices. Mix well, store in refrigerator at least overnight before using. Can be mixed in a kitchenaid mixer. Freezes well for up to 8 weeks.
