Sweet Potato-Applesauce Bundt Cake

This super moist cake is the perfect treat with your morning coffee, afternoon tea or as a dessert after a delicious dinner.

Ingredients
2 cups sugar
1 1/2 cups (15 ounce can) pureed sweet potatoes, could use pumpkin as well
1 1/2 cups applesauce
1/2 cup oil
4 eggs
2 cups gluten free flour blend
1 teaspoon salt
1 teaspoon baking soda
2 teaspoons baking powder
1 teaspoon xanthan gum
1 cup mini chocolate chips (optional)
Instructions
Preheat your oven to 350 degrees. Beat eggs until foamy in a large bowl. Add sugar, sweet potato puree, applesauce and oil and blend by hand, being careful not to over mix. Add all the dry ingredients and blend well. Pour into a well greased bundt pan and bake for 60-70 minutes or until a toothpick inserted near the center comes out clean. It took my oven a bit longer than 70 minutes, in a stoneware bundt pan. Your ovens time may vary.
