I use this recipe for my biscuits. They turn out light and fluffy. You can't even tell that they are gluten-free.

Ingredients
1 cup white rice flour
1/2 cup corn starch
1 cup brown rice flour
1/2 cup sweet rice flour
1/4 buckwheat flour
Instructions
Mix together and use in place of all purpose flour. Keep in an airtight container for easy use.

Tanya - I used this flour mixture today to make a great pancake mix! I'll post it with some pics for you.
Probably THE best pancake mix I've ever had ... and believe me ... we've tried them all.

Thanks, I saw the picture and recipe posted. I really want to try those. I think this weekend I just might do that. I am happy to hear that this also worked for pancakes too.
