Tart apple tartlets
A leftover pie crust treat

Individual dessert "frisbees" made from those scraps of pie crust you don't quite know what to do with. Also disposes of the apples that won't fit a stuffed freezer. The cinnamon-sugar rim creates a pleasant surprise.

Ingredients
Pie crust scraps to make several discs 8” in diameter and 1/4” thick
2 Lodi (or similarly tart) apples, peeled, cored and cut into 1/2” cubes
1 TBLS + 1 tsp sugar, divided
1 TBLS butter
1 1/2 tsp cinnamon, divided
1 tsp cornstarch
pinch grated nutmeg
Instructions
Preheat oven to 375F.
Roll the pie crust scraps into circular discs 1/4" thick and about 8" in diameter.
Using a microwave and small non-metallic bowl, melt the butter. Stir in 1 tsp of cinnamon and 1 tsp of sugar. Brush this mixture onto about 1" of the outside edge of the crust discs, then roll edges inward to form a frisbee shape. Slide discs onto bakers parchment then into oven. Bake 10'. (*)
Meanwhile, prepare apples and toss with cornstarch, remaining sugar, remaining cinnamon and nutmeg.
When discs are done, remove from oven and turn heat down to 350 F. Heap apple chunks atop "Frisbees" and return to oven. Bake 40’ or until apple chunks are caramelized in small patches. Remove and cool on a wire rack. Serve with vanilla ice cream.
(*) Alternatively, bake the discs 20’, convert the apples into very chunky apple sauce, and place dollops of apple sauce atop the discs. Cool and serve.
