Tortillas
These taste like the real thing.

You can enjoy enchiladas and burritos again.

Ingredients
3/4 cup rice flour
1/4 cup garfava flour
1/2 cup potato starch
1/2 cup tapioca flour
1 tsp xanthan gum
1 tsp sea salt
1 tsp baking powder
1/4 cup coconut oil (or olive oil)
1 cup hot water
Instructions
1 – Mix dry ingredients together.
2 – Add coconut butter or oil and blend until crumbly.
3 – Add half a cup of the hot water and knead.
4 – Gradually add more of the hot water, a little at a time until you can knead the dough into a ball. It may not take the whole cup of hot water, just add enough to make a workable dough. This dough is super easy to work with and feels much like a wheat flour dough. It is amazing to work with!
5 – Split into 8 or 10 small balls. Cover with a damp paper towel or cloth.
6 – Roll out each ball into tortillas, about 6” (15 cm) wide. For neat tortillas cut around a small plate with a sharp knife.
7 – Gently place onto a hot skillet for a few seconds until bubbles appear and then flip over. Cook for a few more seconds.

Awesome! I have been wanting to start making my own tortillas. I like hte ones I have bought, but they are not cheap, and of course nothing is as good as FRESH! :)

These are so good! When I made them, even my gluten eating husband said he'd eat them over the wheat variety. I ended up having to make three batches for dinner that night. I was amazed at how much my family loved them, and SO glad to finally have an option other than corn tortillas. Yes, they ARE less expensive and honestly, they are better than the store bought ones. :-) I hope you enjoy them!
