Turkey Quiche Lorraine safe

Yummy way to use up some of those turkey leftovers.

Looking for ways to use up some of that turkey leftover from Thanksgiving? Want a yummy dish to serve this holiday season for a family brunch? This is a yummy dish for both!

Cooking time 40-50 minutes
Servings 8

Ingredients

1 unbaked 9 inch gluten free pie crust (there are several good ones here on Gling)
8 slices bacon
1/4 cup finely chopped onion
1 1/2 cups shredded Gruyere or your favorite cheese
1 cup diced cooked turkey
1 1/2 cups half and half
4 eggs
1/2 teaspoon dry mustard
1/4 teaspoon salt

Instructions

Preheat oven to 350 degrees. Bake crust 8 minutes or until lightly browned. Cook bacon in a medium skillet until crisp; remove bacon, reserving 1 tablespoon drippings in skillet. Drain and crumble bacon; set aside. Saute onion in reserved drippings over medium-low heat until tender. Sprinkle cheese, turkey, bacon and onion into bottom of pie crust. In a medium bowl, beat half and half, eggs, dry mustard, and salt until well blended. Bake 40-50 minutes or until a knife inserted in center comes out clean. Let stand 5 minutes before serving. Serve warm.
