Turkey Stuffing Bake
A tasty way to use up some of those Thanksgiving leftovers.

This is a very tasty way to extend Thanksgiving, if you have a bit of leftover gravy it's the perfect dish!

Ingredients
1 1/2 cups finely chopped onion
1/2 cup finely chopped celery
1 can (14 1/2 ounce) chicken stock, divided
2 eggs, lightly beaten
2 teaspoons poultry seasoning
1/2 teaspoon salt
1/4 teaspoon pepper
6 cups gluten free bread or dinner rolls, cut or torn into chunks
2 cups cooked turkey, cubed
1/2 cup chopped cranberries
Instructions
In a medium saucepan, bring the onion, celery and 1/2 cup stock to a boil. Reduce heat and simmer uncovered for 5-8 minutes or until vegetables are tender. Remove from heat. Stir in eggs, seasonings and remaining broth. Add the bread, turkey and cranberries; mix well. Add more stock if the mixture is too dry. Gluten-free bread tends to be a bit dry, so more may be needed.
Spoon into a 2 quart baking dish that has been greased. Cover and bake in a 350 degree oven for 15 minutes. Uncover; bake 20-25 minutes longer or until heated through.
